Teff Flour is milled from a grass seed that is indigenous to Ethiopia. As Teff is a grass and not a grain it therefore contains no gluten. Teff is very nutritious being high in fibre, protein, iron, calcium, potassium, vitamins, minerals and would be a positive addition to anybodies diet. Teff flour is traditionally used in making flat bread known as injera which accompanies mose Ethiopian meals. It is recommended to mix teff flour with other gluten free flours when baking breads and muffins as teff flour alone can make the end product quite dry.
