Sorghum flour is made by grinding the sorghum grains into a fine powder. Sorghum is a gluten free grain which originated in Africa thousands of years ago and is now also common in India. Sorghum flour is commonly used in gluten free baking and has a mild flavour which is great for pancakes, cakes, breads and cookies. It tends to produce a drier product so extra ingredients are usually needed such as butter, oil, eggs or binding agents to moisten things up a little bit. About 20% of your flour can be substituted in a standard recipe with sorghum flour and in doing so will make more delicious and more nutritious cakes, breads and cookies.
