How to make Coconut Butter
Making coconut butter is super easy and well worth doing as it keeps in the cupboard for a long time. It can be used in loads of different recipes, smeared on toast or made into small moulds an eaten like truffles, very yummy!

You will need:

A high speed blender. If you don't have one, not to worry a regular blender will do the job it will just take a little longer and will require a little dedication and persistence to achieve the end result.

200g - 300g of organic shredded coconut. No less or it doesn't work as well in the blender.

What to do:

Throw the coconut into the blender, flick it on and stand back for a few minutes. That's it! Sometimes and depending on the blender you may need to stop it and scrap down the sides a few times but persevere with it. You will know when it's done when it turns into a runny liquid, about the consistency of a creamy mayonnaise. Pour it into a glass jar or moulds and it's ready to go.
